The rice of the sea

It's amazing that someone would devote themselves to developing a new grain. Seems tremendously uphill for a chef. Also seems like a billion dollar idea that's lazing around in a million dollar restaurant.

Perhaps it's the lifeline we need, perhaps it's just another square on the Soylent Green bingo sheet. We could easily ruin the oceans farming this stuff.

Well, we're already doing that... We'll have to see as to whether or not rising temperatures, shifting currents, and ocean acidity impacts projects like this.
