How much metabolic activity do the legs account for? You don't need those in space.

Legs account for 40% of body mass. I would estimate that person could reduce their body-mass by about 30% by removing both legs above the knee and replacing them with microprocessor controlled prosthesis. The heart can also be replaced in order to reduced body tissue by about a half pound. I am sure there are other unnecessary organs such as genitalia, external ears and parts of the brain that can be removed in order to bring the weight down on our would be astronaut.

NASA scientists are planning on an all vegan Mars crew as being the most sustainably efficient, trying to figure which garden as best to grow, vegan sushi and pizza, etc.
