First ketchup history i learned was in the PBS series, The Poison Squad, about the birth of food safety regulations. Apparently meat was so poorly stored pre-refrigeration that it was basically all rotten, so you put the ketchup or chow-chow or whatever on it so you could choke it down.

People used to do that with black pepper, too, which is why black pepper was so expensive.

And here in the mediterranean you would use a ton of garlic and parsley to drown out the smell of fish turned bad.
