When I worked at McD's when I was 16, we carried 100 lb bags of potatoes and put them into the peeling machine. Fresh potatoes right into the grease.

So the secret is soaking them in sugar/corn syrup, frying once in shortening, then frying a second time in a beef tallow/shortening mix? Kind of want to get a deep fryer to try this out.
